the princesse de zélande oyster is cultured on tables on the so called ‘prince plaat’ according to the french method. the ‘prinse plaat’ is a nutrient-rich area in the oosterchelde which is well known for its rich soil. by frequently and manually shaking the bags, the oyster shell gets a beautiful round model. in the final stage of the breeding, the oysters are stocked in a dry place which ensures that the oyster does not store her energy in the growth of the shell, but in its meat.
